Spontaneous with Raspberry is a 5.1% ABV spontaneous ale brewed using traditional methods inspired by Belgian lambics. Raw wheat and aged hops form the base, with wild yeasts naturally inoculating the wort during outdoor cooling. Fermentation begins within two weeks in oak barrels and can continue for up to three years, developing complex sour and funky notes. The addition of Pacific Northwest raspberries imparts bright, tart fruitiness balanced by earthy and woody undertones from barrel aging. This beer offers a pale, slightly hazy appearance with a medium acidity, showcasing layers of berry, wood, and wild fermentation aromas that evolve with each sip.
