Beer Profile
Ceremony
Ceremony is an American Wild Ale featuring a mixed fermentation base with a delicate 5.0% ABV and mild 15 IBU bitterness. The addition of rice lightens the body, allowing bright, tart notes from wild strawberry and rhubarb to shine through. The beer is dry-hopped with a distinctive tea blend of Japanese Sencha and Chinese Dragonwell, imparting subtle vegetal and green tea aromas that mingle with the saison’s natural funk. This complex interplay results in a refreshing, slightly effervescent beer with a crisp finish and layered fruit and herbal character.
