Mountain of Light - Palisade Peach is a gose-style fruited sour featuring a delicate balance of tartness and fruit sweetness. The beer pours a hazy golden color with a light, effervescent body. Aromas of fresh peach meld with subtle wheat and floral notes. On the palate, gentle sourness from lactobacillus combines with the soft, juicy character of ripe peaches, supported by a crisp minerality and low bitterness. The foeder fermentation imparts a smooth, slightly funky complexity, while the pils malt and wheat base provide a clean, refreshing finish at 5.0% ABV and just 5 IBUs.
