B.A. Raspberry Brett Saison
This farmhouse ale begins as a French Saison base, aged in barrels previously holding Haykin Family Cider Pommeau. Conditioned with raspberry puree and Brettanomyces, the 7.5% ABV brew offers complex layers of flavor. The nose presents bright, tart raspberry fruit character mingled with subtle barnyard funk and earthy spice typical of Brett fermentation. On the palate, a delicate balance emerges between the residual sweetness of the puree, the tannic wood influence from the cider barrel, and a dry, slightly acidic finish. With an IBU of 23, the bitterness is restrained, allowing the fruit and yeast characteristics to dominate the profile.
