This seasonal Saison features a moderate 5.8% ABV and soft 22 IBU, presenting a complex profile rooted in Belgian tradition. Fermentation yields noticeable yeast character, complemented by high carbonation and subtle hints of barnyard funk and mild lactic tartness from a touch of Brettanomyces. Apricot puree is integrated during brewing, enhancing the natural fruity esters of the yeast.
