This Imperial Stout is characterized by a complex fermentation process utilizing Italian red wine yeast, which introduces distinct dark fruit and vinous undertones. Clocking in at 10.5% ABV, this annual release is a carefully constructed blend of stouts aged between three and five years. The extended maturation in bourbon, red wine, and sherry barrels layers rich notes of vanilla, oak, dried fruit, and subtle oxidation over a foundation of roasted malt and dark chocolate. The resulting beer offers a dense, warming mouthfeel and a nuanced, lingering finish.
