The Tortoise

The Tortoise is a 7.5% ABV saison that showcases a complex interplay of farmhouse funk and fruit character. Aged for four years in an old gin barrel inoculated with wild microorganisms from Turtleback Ridge Farm, this beer offers layers of oak, subtle brettanomyces tartness, and earthy farmhouse notes. After barrel aging, local blackberries were added for a five-month refermentation, imparting a delicate fruitiness that balances the rustic funk. The result is a nuanced, medium-bodied beer with bright acidity, gently tart berry flavors, and a lingering woody finish. Designed as a companion to its counterpart, The Hare, it highlights the transformative effects of barrel aging and blending.
